When we bought this cask, the note that has stuck in my head the most was a soft strawberry shortcake note, with a very thin layer of cheese. When we included it in Spooneys, it tasted like chocolate cake and sourdough crusts. Five months later, it tastes like peanuts and

cherries. So this whisky has been put through it's paces and has changed significantly since purchasing. This whisky is very drinkable, we didn't decide to bottle it because it was particularly nuanced or complex. It had a few good notes and it does those notes really well. We believe that people who appreciate those notes, whether they are interpreted in the way we have or if you get something else, will find value in them. When showing it around, we've had a lot of people say that this whisky is their favourite.

A certain number of you have had this whisky before, however, it tastes completely different 5 months later. We tasted it and I thought it was not our whisky. That is how completely different it is.
This is the third cask we bought, and it has become a real unicorn of a cask. This is a triple-distilled, part-malted, part-unmalted barley whisky that is 100% Canadian and tastes directionally like certain whiskies from south of the border. So it's distilled and made from Canadian ingredients, in the style of Irish whisky and tastes like neither of those two countries.
