Last Straw Single Malt Mack Single Malt




At first pour, it smells and tastes a bit musty, and winey, but after letting this sit for 30 – 40 minutes by happenstance. The nose now is much more jammy. It has top notes of fig and cherry jam. There's also a slight cheddar note that layers on top. Overall the nose will fit into the category of dark fruits, but the mid notes are cherry, black tea, strawberry icing and a slight coffee or dark chocolate/tobacco note. I had to pull back a bit on my nosing. The palate starts a bit chalky, with black tea, and earthy red apples, and finishes with cherry. There is also a corn note, even though this is a single malt. That wine character definitely comes through beautifully. The Finish has earthiness, black tea and tobacco. Also maybe some root vegetables, I was picturing a parsnip in my mind but I don't think that really matched the taste accurately, it was something like parsnip.


The finish is on the longer side of medium and the viscosity is also medium. It has a 49.2% ABV and is a collaboration between Last Straw, Elliott McCormack (@singlemaltmack) and Two Sisters Vineyard. It is a single cask limited release that was aged in an ex-bourbon cask for 6 yrs and finished in a Two Sisters Cabernet Franc barrel. This is a true no glitz no glamour, only good honest spirit from Last Straw. Go get one and support a local distillery and Whisky Influencer.
